1-甲基环丙烯结合壳聚糖-纳米硒复合处理对冬枣贮藏品质及生理机制的影响

    Effects of 1-methylcyclopropene combined with chitosan-nano-selenium composite treatment on storage quality and physiological mechanisms of winter jujube (Ziziphus jujuba Mill. cv. Dongzao)

    • 摘要: 为探究不同保鲜处理对冬枣常温贮藏期间品质的影响,以黄骅冬枣为试材,分别采用1-甲基环丙烯(1-MCP)、壳聚糖(CTS)、纳米硒(nano-Se)、1-MCP + CTS以及1-MCP + CTS + nano-Se处理,以清水浸泡作为对照组,在常温(22 ℃ ± 1 ℃)、相对湿度60%~70%条件下贮藏21 d,测定相关指标,旨在筛选出最适宜的保鲜方法。结果表明:相较于其他处理,贮藏期间1-MCP + CTS + nano-Se处理在延缓冬枣衰老方面具有明显优势,该处理不仅推迟了呼吸和乙烯高峰的出现时间,增加了过氧化物酶(POD)活性和谷胱甘肽(GSH)含量,降低了过氧化氢(H2O2) 和丙二醛(MDA)的积累,而且还增加了冬枣细胞壁中果胶、纤维素以及半纤维素含量,延缓了硬度和可溶性固形物含量的下降,显著降低了果实的腐烂率、失重率以及转红指数。此外,1-MCP + CTS + nano-Se处理还增强了苯丙氨酸解氨酶(PAL)活性,并有效提升了果实中的类黄酮含量和硒含量,在延缓果实衰老的同时,实现了硒的生物强化与功能性品质的提升。综上,1-MCP + CTS + nano-Se可作为一种新型保鲜处理用于冬枣保鲜,本研究为冬枣保鲜方法的探索提供了新思路。

       

      Abstract: To investigate the effects of different preservation treatments on the quality of winter jujube (Ziziphus jujuba Mill. cv. Dongzao) during storage at room temperature, Huanghua winter jujubes were used as test material. The jujubes were treated with 1-methylcyclopropene (1-MCP), chitosan (CTS), nano-selenium (nano-Se), 1-MCP + CTS, and 1-MCP + CTS + nano-Se treatments, with water soaking serving as the control group. The jujubes were stored for 21 days at room temperature (22 ℃ ± 1 ℃) and a relative humidity of 60%–70%, and relevant quality parameters were measured to identify the most suitable preservation method. The results indicated that, compared with other treatments, the 1-MCP + CTS + nano-Se treatment demonstrated a significant advantage in delaying the senescence of winter jujubes during storage. This treatment not only delayed the onset of respiratory and ethylene peaks, increased peroxidase (POD) activity and glutathione (GSH) content, and reduced the accumulation of hydrogen peroxide (H2O2) and malondialdehyde (MDA), but also increased the content of pectin, cellulose, and hemicellulose in the cell walls of winter jujubes, slowed the decline in firmness and soluble solids content, and significantly reduced the fruit rot rate, weight loss rate, and reddening index. Furthermore, the 1-MCP + CTS + nano-Se treatment enhanced phenylalanine ammonia-lyase (PAL) activity and effectively increased the flavonoid and selenium contents in the fruit, achieving selenium biofortification and improved functional quality while delaying fruit senescence.In summary, the 1-MCP + CTS + nano-Se treatment is proven to be an effective and innovative preservation technique for winter jujubes, offering novel theoretical and technical references for the research and exploitation of postharvest storage approaches for winter jujubes.
